Salmon Gone Wild


Rialto is one of our absolute favorite local restaurants – their food is so fresh and inventive! This Saturday, you can join Rialto’s Chef Brian Rae to kick off their sustainable seafood dinner series. This weekend’s dinner focuses on “salmon gone wild,” with a menu showcasing wild salmon in all its glory. Brian will be discussing the unique qualities of salmon, sharing tips on how to cook it, as well as the best places to find it.


Check out this amazing sounding menu:

First: Salmon Shoulder Crudo… honeydew consomme, radishes, mint salad

Second: Smoked Salmon Belly… octopus, mussels, cannellini beans, baby kale, harissa aioli

Third: Roasted Salmon… green tomatoes, spicy sopressata, cucumber and basil panzanella

And of course! Dessert: Strawberry Sgroppino… after-dinner cocktail of prosecco, strawberry “caviar”, lemon ice cream, mint

It all sounds so good. Guests dining at the restaurant with a regular reservation on Saturday evening will also be able to order this special menu. (And FYI, the restaurant’s spring menu is delicious!) The dinner series continues through the summer, with a July dinner focusing on striped bass and clams, while the August instalment will feature bluefish, mussels and squid.
