Thursday Crush: Cookie + Kate

We love to experiment with new recipes, and there are so many amazing food blogs we look to for inspiration. One of my absolute favorites is Cookie + Kate, and I think you’ll find it inspiring too! Kate lives in Kansas City, Missouri with her dog, Cookie, where she cooks and blogs about vegetarian whole foods. The recipes often involve combinations I would not have thought of, but at the same time many of them are easy enough to be perfect for dinner on a busy weeknight.

Kale salads are so delicious, and the blog has several great recipes. I especially love the raw kale salad with tahini-maple dressing. Kate’s roasted brussels sprouts and cranberries with barley (pictured above) has been in constant rotation at my apartment. I usually make it with a little feta and short grain brown rice instead of the barely (a perfect substitute if, like me, you can’t eat gluten). The brussels sprouts and cranberries are so healthy, but the rice and touch of maple and balsamic turn this dish into the best comfort food. Just perfect for a blustery fall evening.
