Thursday Crush: Chia Pudding
Have you tried chia pudding? Everywhere I look, I seem to find different variations on this nutrient-dense and delicious food. It’s also surprisingly easy to make! The challenge is giving it enough time for the chia seeds to do their thing. Often I make it before bed so I can have a fresh bowl for breakfast!
There are so many recipes out there – some with greek yogurt or nut milks, with fruit blended in, and different sweeteners. I am in the “simpler can be better” boat and love to make chia pudding with almond milk and a little maple syrup – and then top with whatever I have in the fridge. My favorite toppings include fresh strawberries (or any berries, really), coconut shavings, and maybe even some cocoa if I’m feeling like living it up.
