A Refreshing Agua Fresca
This recipe could also be dubbed ‘The Pregnant Woman’s Margarita’, because that is its current role within our household. ‘Tis a cruel long summer and heatwave when you can’t indulge in a nice smoky mezcal watermelon margarita. But my purgatory is almost over, babe is due in a month’s time, and I can make a pitcher or these, rather than a solo drink for hubs and a virgin mocktail for myself. Even that word, mocktail, so sad.
Whether spiked, or not, this is the most refreshing summer drink. Serve at your next bbq and let people decide whether to spike, or not. You know what I’ll be doing…soon.
Watermelon Lime Agua Fresca
2 cups pureed seedless watermelon/juice
3 limes, juiced
2 cups water (also great with sparkling water or champagne)
1 cup simple syrup (1 cup of water and 1 cup of sugar, dissolved over heat)
Blend watermelon up in your blender. Mix all ingredients in a large pitcher, adjust to taste, and serve over ice. Garnish with fresh watermelon slices or mint.
