An Easy Weeknight Meal

My favorite weekday meal is a big kale salad. If done right, it can be super satisfying and delicious, and you may even forget how healthy it is for you. I love adding items that are in season. A few of my favorite salad ingredients are strawberries, tart apples, toasted pecans, grilled chicken and of course cheese of any kind. The key to a good kale salad? Massage the kale with a little salt to release more flavor and make the greens more tender.
Now that Milo is busier than ever, I often find myself wondering what I can throw together for dinner. You know those evenings… you haven’t had time to run to the store, and there’s not much in the fridge. I mean, pickles are good and all, but they don’t make a good enough dinner. For these nights, we love having easy options that are still healthy and satisfying.
I recently tried the Sweet Kale Salad Kit from Eat Smart, and it’s going to be added to our rotation for the evenings when we need a little help with dinner. It was so easy to assemble — everything is in separate packets, all you need to do is open and mix. The chef-inspired salad kit is a unique blend of seven superfoods – kale, green cabbage, broccoli, Brussels sprouts, chicory, roasted pumpkin seeds and dried cranberries – completed with a delicious poppy seed dressing. So good!
Best of all, the kit only has clean ingredients. You would be surprised by how many weird things are added to pre-packaged foods, salads included. Eat Smart is actually the first brand of salad kits to commit to clean ingredients and labeling.
Next up, I’d love to try the Strawberry Harvest Salad Kit. Feta cheese and strawberry vinaigrette? Sounds like a winning combination. Which salads would you like to try?
