An Easy Weeknight Meal

My favorite weekday meal is a big kale salad. If done right, it can be super satisfying and delicious, and you may even forget how healthy it is for you. I love adding items that are in season. A few of my favorite salad ingredients are strawberries, tart apples, toasted pecans, grilled chicken and of course cheese of any kind. The key to a good kale salad? Massage the kale with a little salt to release more flavor and make the greens more tender.

Now that Milo is busier than ever, I often find myself wondering what I can throw together for dinner. You know those evenings… you haven’t had time to run to the store, and there’s not much in the fridge. I mean, pickles are good and all, but they don’t make a good enough dinner. For these nights, we love having easy options that are still healthy and satisfying.
